Something you can’t leave without at least trying once is calçots. Between the months of December and March, calçots are in season and locals enjoy a Calçotada. The calçot, is a cross between a spring onion and leek, is one of the most beloved products in Catalonia. A Calçotada is a winter barbecue where the calçots are packed tight on a grill, charred and then dipped in a rich and nutty romesco sauce (don’t forget to remove the charred layer first!).
